Ingredients:

For the Air-Fried Barramundi:

  • 200g barramundi fillet with skin
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

For the Garlic Herb Vegetables:

  • 150g asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

Air-Fried Barramundi:

  1. Preheat the air fryer to 400°F (200°C).
  2. Pat the barramundi fillet dry and rub the skin with olive oil, lemon juice, smoked paprika, salt, and pepper.
  3. Place the barramundi in the air fryer basket, skin side down.
  4. Air fry for 8-10 minutes or until the skin is crispy, and the barramundi is cooked through.

Garlic Herb Vegetables:

  1. In a bowl, toss the asparagus and cherry tomatoes with olive oil, minced garlic, dried thyme, salt, and pepper.
  2. Spread the vegetables on the air fryer tray or basket in a single layer.
  3. Air fry at 375°F (190°C) for 12-15 minutes or until the vegetables are tender and slightly charred.

Assembling the Meal:

  1. Place the crispy-skinned barramundi on a plate.
  2. Arrange the garlic herb vegetables alongside the barramundi.
