Cod fillet cooked in a coconut curry sauce, served over cauliflower rice for a rich and satisfying keto dinner.

Ingredients:

  • 150g cod fillet
  • 2 tablespoons coconut milk
  • 1 teaspoon curry powder
  • 100g cauliflower rice
  • 1 tablespoon coconut oil
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions:

  1. Season cod with salt, pepper, and curry powder.
  2. In a pan, heat coconut oil over medium heat.
  3. Add cod and cook until opaque.
  4. Pour in coconut milk, simmer until the sauce thickens.
  5. In the same pan, add cauliflower rice and cook until heated through.
  6. Garnish with fresh cilantro.
