Baked Eggs with Spinach and Sauerkraut Hash - Keto Australia

Baked eggs over a bed of sautéed spinach and sauerkraut hash, baked to perfection with a touch of olive oil.

Ingredients:

  • 2 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup sauerkraut
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat.
  3. Add chopped spinach and sauté until wilted.
  4. Stir in sauerkraut, creating a hash at the bottom of an oven-safe dish.
  5. Make two wells in the hash and crack eggs into them.
  6. Bake in the preheated oven until the eggs are cooked to your liking.
  7. Season with salt and pepper before serving.
