Baked eggs over a bed of sautéed spinach and sauerkraut hash, baked to perfection with a touch of olive oil.
Ingredients:
- 2 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup sauerkraut
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat.
- Add chopped spinach and sauté until wilted.
- Stir in sauerkraut, creating a hash at the bottom of an oven-safe dish.
- Make two wells in the hash and crack eggs into them.
- Bake in the preheated oven until the eggs are cooked to your liking.
- Season with salt and pepper before serving.
