Salmon and Spinach Stuffed Omelette with Olive Tapenade - Keto Australia

A flavorful omelette stuffed with smoked salmon, sautéed spinach, and topped with a tangy olive tapenade.

Ingredients:

  • 3 large eggs, beaten
  • 100g smoked salmon, flaked
  • 1 cup fresh spinach, chopped
  • 2 tablespoons olive tapenade
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. In a pan, heat olive oil over medium heat.
  2. Add chopped spinach and sauté until wilted.
  3. Pour beaten eggs over the spinach.
  4. Place smoked salmon on one half of the omelette.
  5. Fold the omelette in half and cook until eggs are set.
  6. Top with olive tapenade and season with salt and pepper.
