Cauliflower Mash Recipe
Ingredients
- ½ large head of cauliflower (6 cups florets, stems mostly removed)
- ½ tsp olive oil
- 2 cloves garlic (minced)
- 15 g unsalted butter (cut into chunks)
- 15 g cream cheese
- Salt (to taste)
- Optional garnish: chopped chives or melted butter
Instructions
Option 1 – Microwave Method:
- Place cauliflower florets in a large bowl with ½ cup (118 mL) water. Cover with plastic wrap.
- Microwave for 10-15 minutes until the florets are soft and mushy. Drain and pat dry.
Option 2 – Steam Method:
- Fill a large saucepan with salted water, just below a fitted steamer basket.
- Bring water to a boil, add cauliflower to the basket, and cover with a lid.
- Reduce heat to simmer and steam for 10-15 minutes until soft and mushy.
Making the Mash:
- Heat olive oil in a small skillet over medium heat. Sauté garlic for 1 minute until fragrant.
- Combine cooked cauliflower, sautéed garlic, butter, cream cheese, and salt in a food processor.
- Blend for 1-2 minutes until smooth. Adjust salt to taste.
- Garnish with chives or drizzle melted butter, if desired.
