Keto Cauliflower Rice Recipe

Ingredients

  • ½ medium cauliflower (~4 cups cauliflower rice; or equivalent frozen cauliflower rice)
  • 1 g sea salt (about ¾ tsp, adjust to taste)
  • 0.3 g black pepper (about ¼ tsp, adjust to taste)
  • 15-30 ml olive oil (1-2 tbsp; flavour is better with 2 tbsp)

Instructions

  1. Prepare the Cauliflower:

    • Cut the cauliflower into quarters and remove the core. Chop into florets.
    • Use a food processor with a grater blade or a box grater to rice the cauliflower.
  2. Cook the Rice:

    • Heat olive oil in a large skillet over medium-high heat for 1-2 minutes.
    • Add the riced cauliflower to the skillet. Sprinkle with sea salt and black pepper.
  3. Stir Fry:

    • Stir fry for 3-5 minutes, uncovered, until the cauliflower rice is soft but still slightly firm (al dente).
    • If using frozen cauliflower rice, it may take an additional 1-2 minutes.
  4. Serve:

    • Adjust seasoning to taste and enjoy as a side dish or base for your favourite meal.
