Keto Cauliflower Rice Recipe

Ingredients
- ½ medium cauliflower (~4 cups cauliflower rice; or equivalent frozen cauliflower rice)
- 1 g sea salt (about ¾ tsp, adjust to taste)
- 0.3 g black pepper (about ¼ tsp, adjust to taste)
- 15-30 ml olive oil (1-2 tbsp; flavour is better with 2 tbsp)
Instructions

Prepare the Cauliflower:
- Cut the cauliflower into quarters and remove the core. Chop into florets.
- Use a food processor with a grater blade or a box grater to rice the cauliflower.

Cook the Rice:
- Heat olive oil in a large skillet over medium-high heat for 1-2 minutes.
- Add the riced cauliflower to the skillet. Sprinkle with sea salt and black pepper.

Stir Fry:
- Stir fry for 3-5 minutes, uncovered, until the cauliflower rice is soft but still slightly firm (al dente).
- If using frozen cauliflower rice, it may take an additional 1-2 minutes.

- Adjust seasoning to taste and enjoy as a side dish or base for your favourite meal.
