A flavorful coconut-infused cauliflower rice stir-fry with tofu and a medley of low-carb vegetables.
Ingredients:
- 150g firm tofu, cubed
- 1 cup cauliflower rice
- 1/2 cup bell peppers, sliced
- 1/2 cup broccoli florets
- 2 tablespoons coconut oil
- 1 tablespoon tamari (or soy sauce)
- 1 teaspoon curry powder
- Salt and pepper to taste
Instructions:
- In a pan, heat coconut oil over medium heat.
- Add tofu cubes and cook until golden.
- Add cauliflower rice, bell peppers, and broccoli to the pan.
- Sprinkle tamari and curry powder over the stir-fry.
- Stir everything together and cook until vegetables are tender.
