A protein-packed vegan keto stir-fry featuring chickpeas, tofu, and nutrient-rich spinach, seasoned with savory spices for a satisfying meal with less than 10g of carbs.
Ingredients:
- 150g firm tofu, cubed
- 1/2 cup chickpeas (cooked or canned)
- 100g spinach
- 1 tablespoon coconut oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 1 tablespoon nutritional yeast (optional)
- Fresh cilantro for garnish
Instructions:
- In a pan, heat coconut oil over medium heat.
- Add tofu cubes and cook until golden on all sides.
- Add chickpeas to the pan and stir to combine.
- Sprinkle ground cumin, smoked paprika, turmeric, salt, and pepper over the tofu and chickpea mixture.
- Add fresh spinach to the pan and cook until wilted.
- If using, sprinkle nutritional yeast over the stir-fry for added flavor.
- Stir everything together until well combined and heated through.
- Garnish with fresh cilantro.
