A flavorful coconut-infused cauliflower rice stir-fry with tofu and a medley of low-carb vegetables.

Ingredients:

  • 150g firm tofu, cubed
  • 1 cup cauliflower rice
  • 1/2 cup bell peppers, sliced
  • 1/2 cup broccoli florets
  • 2 tablespoons coconut oil
  • 1 tablespoon tamari (or soy sauce)
  • 1 teaspoon curry powder
  • Salt and pepper to taste

Instructions:

  1. In a pan, heat coconut oil over medium heat.
  2. Add tofu cubes and cook until golden.
  3. Add cauliflower rice, bell peppers, and broccoli to the pan.
  4. Sprinkle tamari and curry powder over the stir-fry.
  5. Stir everything together and cook until vegetables are tender.
  6. Season with salt and pepper.
