Chickpea and Spinach Stir-Fry with Tofu - Keto Australia

A protein-packed vegan keto stir-fry featuring chickpeas, tofu, and nutrient-rich spinach, seasoned with savory spices for a satisfying meal with less than 10g of carbs.

Ingredients:

  • 150g firm tofu, cubed
  • 1/2 cup chickpeas (cooked or canned)
  • 100g spinach
  • 1 tablespoon coconut oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1 tablespoon nutritional yeast (optional)
  • Fresh cilantro for garnish

Instructions:

  1. In a pan, heat coconut oil over medium heat.
  2. Add tofu cubes and cook until golden on all sides.
  3. Add chickpeas to the pan and stir to combine.
  4. Sprinkle ground cumin, smoked paprika, turmeric, salt, and pepper over the tofu and chickpea mixture.
  5. Add fresh spinach to the pan and cook until wilted.
  6. If using, sprinkle nutritional yeast over the stir-fry for added flavor.
  7. Stir everything together until well combined and heated through.
  8. Garnish with fresh cilantro.
